What you need:
- one cup almond meal
- 1 tablespoon coconut oil
- 1 tablespoon rice malt syrup
- 1/4 cup cranberries
- 1/2 cup shredded coconut
Mix all the ingredients together in a bowl until well combined. If you need to melt your coconut oil: zap it in the microwave for about 30 secs.
On a baking tray place spoonful amounts of mixture on the paper and bake in a pre-heated oven for 160.c for about 10 or 15 minutes.
Cool and store in an air tight container.
